Sweet Potato Banana Truffles

Sometimes you need something sweet but quite unique. A flavor-packed snack that's also different from what you've had before and packed with nutritional benefits.

This recipe was put together with the above in mind. It was mid-pandemic and the kitchen with the dessert corner seemed the most enticing area to spend time in. Nothing beats the comfort of homemade raw desserts.

INGREDIENTS

Truffle Filling 

  • 1.5 small ripe bananas  

  • 1/4 cup cooked, cooled and mashed sweet potato

  • 5 tbsp coconut flour 

  • 1 tbsp almond butter 

  • 1.5 tsp ceylon cinnamon powder 

  • 1/4 tsp ginger powder⠀⠀⠀⠀⠀⠀⠀⠀⠀ 

Chocolate Coating 

  • 1/3 cup coconut oil 

  • 1/4 cup cacao powder 

  • 1 tbsp maple (you can also melt your favorite dark chocolate or chocolate chips with some coconut oil)⠀⠀

INSTRUCTIONS

1. Add all filling ingredients without the spices first to a food processor and blend until creamy.

2. Next add the spices and blend again until a ball is formed. An additional tbsp of coconut flour can be added if a ball is not forming. 

3. Scoop out a tablespoon of the filling and roll it into a small ball. Do the same with the rest of the quantity. Set them all aside on a parchment paper lined sheet pan and into the freezer to set for around 30 mins or until firm. 

4. Meanwhile, in a separate bowl, melt coconut oil and add cacao powder and sweeter if using. Alternatively, melt your favorite dark chocolate. 

5. Take the truffles out of the freezer and dip them in the chocolate. Lay them flat on a parchment paper lined pan. Set in the fridge for 10 mins and take them out for serving.
